Ingredients

  • 1 cup kale (stems removed, chopped)
  • 1 cup spinach (fresh)
  • 1 Courgette (thinly sliced)
  • 1 cup broccoli florets
  • 1 large tomato (diced)
  • 1 large carrot (julienned)
  • 1 cup red cabbage (shredded)
  • 1/2 cup beets (peeled, shredded)
  • 1/2 cup sprouts 
  • 1/4 -1/2 cup of pumpkin seeds
  • 3 tbsp coconut or nut oil
  • 1 onion sliced
  • Sea Salt & pepper to taste
  • 3 cloves of garlic, minced & fresh ginger to taste

Instructions To Make The Stir Fry

  • Heat the oil in a large skillet or wok over medium heat.
  • Add garlic, onions and ginger and cook for about 30 seconds.
  • Add broccoli, Brussels sprouts, carrots, red cabbage, and beets. Sauté for 5-7 minutes or until they begin to soften.
  • Add courgette, tomatoes, kale, and spinach, stirring occasionally until greens are wilted and other veggies are tender-crisp.
  • Season with salt and pepper to taste.
