Detox Green Soup Recipe

Ingredients

  • 1 medium head of broccoli
  • 2 courgettes
  • 2 cups peas (fresh or frozen)
  • 1 cup coriander (cilantro)
  • 1 cup parsley
  • ½ leek, sliced
  • 1 onion, sliced
  • 3 sticks of celery, sliced
  • 5 stalks of asparagus
  • 1 litre vegetable stock, hot
  • 2 cups fresh spinach
  • 3 pinches of cayenne pepper
  • Light olive oil (for cooking)
  • ½ tsp turmeric powder
  • 6 garlic cloves (or more)
  • Thumb-sized piece of ginger
  • Sea salt & black pepper to taste

Optional Garnishes

Customise your soup with these nutritious toppings:

  • Raw garlic or ginger
  • Cayenne pepper
  • Sauerkraut or kimchi
  • Parsley or cilantro
  • Green pumpkin seeds or sunflower seeds
  • 1–2 tbsp extra virgin olive oil
  • Brazil nuts (high in selenium)

Method

  1. In a large pan, heat olive oil and sauté celery, leek, and onion until soft.
  2. Add garlic, ginger, and turmeric, stirring for 1–2 minutes.
  3. Add remaining vegetables and hot stock. Simmer until tender.
  4. Blend until smooth (optional). Season with sea salt, pepper, and cayenne.
  5. Top with your chosen garnishes and enjoy warm.
